Dining
The hotel operates two on-site restaurants: The Dining Room, which holds a Michelin star for its innovative tasting menus served Thursday to Sunday evenings, and Grey's, an à la carte small plates restaurant open for lunch Thursday to Sunday and dinner Wednesday to Sunday. The Dining Room experience begins with a course presented by the head chef in a dedicated area next to the kitchen, allowing guests to observe the kitchen team at work. Grey's offers tapas-style dishes such as beetroot gnocchi and lobster ravioli, with an extensive wine list including Gusbourne wines from Kent.
Spa & Wellness
Aquarias Spa was voted in the top 10 of UK spa retreats by Condé Nast Traveller Readers, and offers Sothys signature treatments for well-being. The spa features a hydrotherapy pool, sauna, steam room, salt scrub room with complimentary coconut scrub, and a dedicated bar and dining area where drinks are served to guests on loungers. Complimentary smoothies are provided at the end of the day, and the spa also offers a welcome tray with juice and herbal tea prepared by the therapist after treatments.
Gardens & Grounds
The hotel is set within 12 acres of landscaped gardens containing 26 unique areas, including a butterfly garden and reading nooks with lanterns for guests to light at dusk.
